What is Awaze?
Awaze (also spelled awaze) is a spicy and flavorful Ethiopian condiment or sauce commonly used in Ethiopian cuisine. It is made by blending together ingredients such as berbere (a traditional Ethiopian spice blend that includes chili peppers, onion, garlic, ginger, and various spices) oil (often niter kibbeh, which is clarified butter infused with spices), and sometimes vinegar or lemon juice
The consistency of awaze can vary from a thick paste to a thinner sauce, depending on the specific recipe and intended use. It is often used as a dipping sauce for injera (traditional Ethiopian flatbread), as a marinade for meats, or as a flavoring agent in various dishes such as tibs (sauteed meat) or kitfo (minced raw meat dish).
Awaze adds both heat and depth of flavor to Ethiopian dishes, contributing to the distinctive and rich flavors characteristic of Ethiopian cuisine. It is an essential component in many traditional Ethiopian recipes and plays a significant role in enhancing the overall dining experience.

Injera is a traditional Ethiopian and Eritrean flatbread made from teff flour, which is a type of grain native to the region. It has a spongy texture and is slightly tangy due to the fermentation process involved in its preparation. Injera is a staple food in these countries and is often used as both a serving base and an eating utensil. It is typically served with various stews, vegetables, and meats placed on top of it, and diners tear off pieces of injera to scoop up the accompanying dishes. This bread is central to the cuisine and culture of Ethiopia and Eritrea, and it is enjoyed in various forms and preparations across the region.
Generally injera made of teff (native grain) is gluten free. But, we generally serve non gluten free injera. Let us know if you choose gluten free and gluten free injera costs $5 extra
